This is entry #3 in our ongoing 100 Philosophers, 100 Artworks, 100 Words Series.

Philosopher: Allan Hazlett (University of Edinburgh)

Artwork: Thomas Keller, lamb bacon (Per Se, New York City, 22nd January, 2009).

Words: This might be a cheat because (so I’d argue) dishes of food aren’t artworks, but if they were then this would be a masterpiece.  You take a piece of this tender little cube of meat into your mouth, you smell a distant fire, the morsel collapses under slight pressure, and then there’s rich warm smoke obscuring everything – you can’t see or hear or think or talk; you can just barely make out a few cars far below, traversing an arc of Columbus Circle.  Then you’re suddenly back at the table, and a veil has either lifted or descended.
